CPAC 2015

This is Trafalgar Law ^
It's become a tradition for my friend Wendy and me to go to CPAC (Castle Point Anime Convention). This year they held it on Sunday March 29th. Every year Wendy and I say we'd try and dress up for it, but we always run out of time to put something together. This year, to follow her Trafalgar Law theme from the anime One Piece, I made a shirt to look like Trafalgar's shirt for Wendy's birthday gift. I made her a cake with that character, I figured since she already has his hat, why not make her a shirt that way she'll have somewhat of a makeshift costume of her favorite character.

I found a scoop neck dress from Forever 21 that matched the color of his shirt. (photo on the left) Here's a picture of what the dress looked like after I added the final touches. (right)


She wore a long sleeve black top underneath the dress. She looked adorable! She had one guy at the convention come up to her and asked her for a picture. The guy was cosplaying as Luffy, another character from One Piece. Just as we were about to leave, another guy ended up approaching her and complimenting her outfit. It was nice to know that other people from the convention were able to recognize who she was cosplaying as. 

I also met up with a good friend of mine, Sal, at CPAC. Sal and I go way back, we use to work at the same bakery! We spent a few hours walking around the Dealer's Room and Artist's Alley. That's where the attendees get to shop to their hearts content. We all bought so much from the convention. CPAC is always held on the campus of Stevens Institute of Technology in Hoboken, New Jersey.


Here are some of the things I got from CPAC this year. There was one other item that I bought, but I'm not going to post it here on the blog, because it's going to be a Christmas gift that I intend to give to a friend. Just in case that person reads the post, wouldn't want to spoil the gift. And yes, I do buy and plan Christmas gifts WAYYY in advance. I got two posters, one from my favorite TV series, Supernatural and Big Hero 6. And three cute little bunny pins. I think I've started a hobby of collecting pins from conventions now. When I got home I found an extra pin in my bag! Sal surprised me with the 'Spirited Away' sprites pin.

Best Friend's Birthday

Every year I look forward to making a custom cake for my best friend Wendy. I've been making cakes for her for years now. It all started when I made my first Pikachu cake. Then my friends started requesting for my cakes. This year, Wendy asked for a cake with her favorite character from the anime show One Piece. I made her the chibi version of Trafalgar Law. 


Unfortunately, the cake didn't survive the whole trip into the city. The only thing that did survive was the cake topper of the character Trafalgar Law. All hope was lost because we didn't have a back up cake for the party. I didn't want to serve a cake that was in pieces, it's just not presentable. Thankfully the bakery, Paris Baguette was down the block. Paris Baguette is one of my favorite bakeries because I think they make the prettiest minimalist looking cakes. I've never bought a whole cake from them before, this was a first for me. I was so excited. I got her a strawberry fresh cream cake.


Wendy held her birthday party at IchiUmi, a Japanese buffet in Korean Town in the city. The food was really good there. I'm really bad at dining in buffets because I never know what to start with. I always end up filling myself up before everyone else, and then not be able to try everything that I wanted to. Note to self, never start with the rice and meat portions. Always go light with appetizers, like that unlimited amazing selection of sushi first. But now I know for next time. I really liked the place. The ambiance was good too. It's roughly $35 per person, not including tip and tax. It's all you can eat for 2 hours. I'd say, according to NYC standards, that's a reasonable price for good buffet food. I'm definitely going again with a smaller group of friends.


Something amazing happened a little while into our meal. The waiter called me over. Apparently the cake that I had made for the occasion, that I thought couldn't be saved, was brought out by one of their managers! I had told them to just throw it out because I couldn't fix it in the restaurant without my tools. Their manager had taken it back to their kitchen and pieced it back together!!! I was so astounded by their customer service. It was like a miracle for that cake to even look whole again. He even added a few fresh strawberries on top. They did everything they could and when it was time to bring out the cake they even gave us candles for it. We ended up serving my cake and just saving the cake from Paris Baguette for Wendy to take home. I don't think I've ever been more surprised with such great customer service, EVER. Here's a snapshot of the cake that they were able to save. 


At the end of the party, Wendy took home the cake topper that I made as a souvenir.

Sweater Weather

It's finally Spring, but mother nature has a sense of humor. I was so psyched about Spring, the long awaited warmer days, but it just had to snow on the first day of Spring. And what better way to spend the cold weather, then with friends, hot pot, and loads and loads of wine and champagne. My friend invited me to her house for a casual house warming party. I made mini cupcakes for dessert. Since Spring decided to not show up, I figured I'd bring Spring to the party. While we're on the topic of sweater weather, check out this song!



Did you know that Daffodils start to grow just as the snow is melting when spring is suppose to arrive. It's my number one favorite flower! It makes me so happy when I see vibrant yellow Daffodils sprout over a thin layer of white fluffy snow.   

The hot pot dinner was the perfect thing for this sort of weather. There was a large party of ten gathered around a small round table. Everyone sitting side by side, huddled in anticipation for the warm food to cook in front of them. I didn't know anyone there except for the hostess, her husband and one other person. I loved how our hostess broke the ice for us. While the food was being cooked we all introduced ourselves once more and even told one fun fact about ourselves. Story time is the best way to mingle and break tensions. I'm so grateful that I was able to travel this past January. My life is so much more colorful with that new experience. It was fun to share stories of our travels and to hear their adventures. If you've never tried hot pot before, you should totally be spontaneous and have one. Hot pot in my opinion is a great low budget meal and with minimal strain for the host. It's fun to make your own food, chatting while you wait for your food to cook. It's a very interactive meal. 


One of my friends at the party is a huge fan of board games. It's sort of like a hobby of his. He's always in search of a creative board game to invest in. He introduced me to two new games, that I haven't heard of. I'm pretty old fashioned, I love a good ole board game. One of my favorite board games I own at home is Settlers of Catan

Have you heard of Ticket to Ride or Evolution? I was hooked after one game of Ticket to Ride! He bought the limited edition 10th anniversary board, and it was gorgeous. I'm seriously going to save up for this edition. The game is simple to understand, but there are a few approaches you can take for your objectives. For our first game everyone was new to it, and of course I did the unexpected objective. I was sneaky and would block people. DOOMED them on their last piece. I could have kept it nice and simple, but nope. I love a good competitive game. I think that livens up the game don't you think? Out of the two games, Ticket to Ride was my favorite one. Evolution was intense, there was more strategy to it than Ticket to Ride. We had five people join in on each game. I found out that they sell these two games on Amazon!!! 


The limited edition of Ticket to Ride had individually packaged tins for the players' pieces in the game. They were absolutely adorable. That was a huge factor that won me over. That specific edition is around $80. In my opinion, totally worth it. The board itself is slightly bigger too. The regular edition is around $30. You can see in the photo that I took of one of the tins, is that not cute?! 


Evolution, was intense. It was all about survival, eat or be eaten kind of playing field. Me being me, I was out for blood. What, I can't help it. I love being a devil's advocate when it comes to board games. And I was so close to winning too!

Saint Patrick's Day

Last January I went on a trip to Europe and visited Dublin for the first time. I went to their oldest pub called 'Brazen Head', dating back 1198, for dinner on our first night. Since I was in Ireland I had to try their stew. I ordered their Beef and Guinness Stew. Ireland was all about their Guinness, since that trip, I finally got used to the taste of dark beer. Guinness was all I ever drank with my meals. So for Saint Patrick's Day this year I figured I'd recreate the adventure by making a version of their Guinness stew. I found a recipe online. I didn't follow it completely, but I did use it as a base guideline for making my stew. I also found a recipe on the official Guinness Storehouse website. The recipe below has my alterations that I used to make my stew. If you're the visual type like me the two websites I provided have step by step photos and a video if you'd like. I found that the step by step photos helped guide me in the right direction.

Beef and Guinness Stew Recipe

2 lbs Beef Round Roast
2 Tbsp Olive Oil
3/4 cup of all Purpose Flour
1 tsp fine sea salt (seasoning the beef)
1 tsp ground black pepper (seasoning the beef)

1 can or bottle of Guinness (12-14.9 oz)
4 Tbsp tomato paste
1 Tbsp Worcestershire sauce
1 tsp fine sea salt (for sauce)
1 tsp ground black pepper (for sauce)
1 tsp dried thyme
1 1/2 tsp fresh rosemary or dried
4 cloves of peeled garlic
1 stem of bay leaves
1 carton of beef stock (32 oz)
2-3 large Idaho potatoes peeled, quartered
2 large yellow onions peeled, quartered
4 medium carrots peeled, chopped 2" pieces
3 stalks celery chopped 2" pieces
3 cups water


Instructions

1) Peel your 4 cloves of garlic, slice it in half and set aside.

2) Clean, and prepare all of your vegetables and set it aside in a large bowl. Wash the celery stalks and cut into 2" pieces. Wash and peel the carrots, and cut into 2" pieces. Peel the yellow onions and cut into quarters. Peel the potatoes and cut into quarters. (Keep in mind that none of the vegetables shrink while cooking, it won't melt away in the stew)

3) For the beef, pat dry with a paper towel and trim the excess fat from underneath off. Set aside the excess fat because you'll be using it for flavoring. Cut the beef into rough 2" cube pieces. I was able to cut about 20 or so pieces. You want big pieces, because it will shrink as it cooks.

4) I used a cast iron 12" skillet, because I didn't have a Dutch Oven pot. And it worked perfectly. First, I heated my skillet before putting in the 2 Tbsp of olive oil. Then after a minute I placed the beef's excess fat that we set aside into the skillet. (I had the heat on medium, if it splatters turn it slightly lower) While that burns on the skillet, I placed 3/4 cup of all purpose flour in a bowl and coated all the cubed pieces of meat. If you want to save time you could put the flour and cubed meat into a Ziploc bag and shake well until all the pieces have been coated evenly. The flour on the meat is used to thicken the stew.

5) By the time you finish coating the meat, the fat pieces in the skillet should be burnt to a crisp, discard these pieces when it gets to that point, if it is not completely burnt leave it on the side of the skillet. We want all the excess fat to melt and flavor the oil. Start placing the cubed meat, half a batch at a time about ten pieces spaced evenly. Be sure not to crowd the pieces because you want to avoid creating steam. We want to brown the meat on all sides. Do not cook the meat all the way, just brown the sides. While that's caramelizing, sprinkle 1/2 tsp of sea salt and 1/2 tsp of ground black pepper over the meat, for the first batch. And do the same for the second batch. Once both batches are seasoned and browned, place it all on a large plate and set aside for later use.

6) Remember to discard the excess fat piece that was left burning. Now you should see practically no oil left in the pot, except a layer of charred pieces on the bottom of the pot. You want this! That's where all the flavor is kept. On high heat, slowly pour in half the can of Guinness. Start scraping with a wooden spoon all the cooked brown bits that's stuck to the bottom of the pot. Bring this to a boil.

7) Reduce to medium heat, while you add the tomato paste. Add the remaining can of Guinness. Add the Worcestershire sauce, 2 tsp sea salt, 2 tsp ground black pepper, 1 tsp of dried thyme, 1 1/2 tsp of  rosemary (I didn't have fresh so I wet the dried rosemary that I had and minced it into smaller pieces, wetting it prevent it from bouncing everywhere). Put in the halved pieces of garlic, the basil leaves, the 6 Tbsp of beef stock and 2 cups of water. Bring to a simmer, about 2 minutes, then add back in all the browned beef, including any excess juice that accumulated on the plate. Stir well. Preheat the oven to 375 degrees Fahrenheit.

8) Add all the chopped vegetables into the skillet. Slowly stir, to cover all the pieces in the sauce. Add the remaining cup of water, just enough to submerge most of the vegetables and meat. It's okay if you find some pieces of vegetable or meat sticking above the sauce. The liquid content for me was about half an inch from the top of my skillet, I didn't want to fill it to the brim incase it boiled over in the oven. Turn the heat to high and bring this all to a boil. Once it has boiled cover the top of the skillet with aluminum foil and poke a few small holes with a knife. If you are using a Dutch Oven pot, just cover it with the lid. My skillet didn't have a lid. Carefully place the skillet onto a cookie sheet. Make sure the cookie sheet is large enough for the base of your pot or skillet where it is leveled.

9) Once the oven is at 375 degrees Fahrenheit. Place the cookie sheet with the skillet on top in the oven. Cook for 1 hour and 30 minutes, without lifting the lid, so NO PEEKING. When it's ready, take it out and covered it. Allow it to rest for 10-15 minutes, if there is excess fat that rises to the top, you could remove it if you'd like. The longer the sauce sits the thicker it'll be. Season to taste if necessary, and be sure to remove the basil leaves!

10) Enjoy with a cold pint of Guinness! This recipe made about 3-4 servings. I only cooked for two people so we had plenty of left over.



I changed the original recipe because I didn't have 3 hours to make this dish. I had to cut the time and portion size in half. The result was the same as if I had been cooking it in a slow cooker for hours. Everything melts in your mouth. You have to taste this for yourself. I wish my pictures could have shown you how amazing this smelled and tasted.

While I was waiting for the stew to cook in the oven I painted my nails to pass the time!

Brooklyn Adventure

Last Sunday, I finally got to meet Nancy and Eugene! They're both friends that I met through a game called 'League of Legends' and I was super lucky to be able to celebrate their birthdays that day. For their birthday gift, I made two dozen mini cupcakes themed after the game we all played. The little characters are called 'Poros'. They're super adorable and they love poro snacks, which are the swirly biscuits on the other cupcakes. Each box had an edible chocolate birthday plaque, one for Nancy and one for Eugene. I was thrilled to hear that they both enjoyed the minis!



We all went out to dinner at an all you can eat Korean BBQ restaurant. $25.99 per person for 2 hours of all you can eat. I'd say that's totally worth it. And for that particular restaurant, if you eat on your actual birthday, you eat for FREE! You have to bring at least one friend with you, but that's still an insane offer!! The food was amazing, I would totally go back there again, this time for my birthday and add in the hot pot feature. 

After I got home, Nancy posted a picture of her box of mini cupcakes on her Facebook and guess what I noticed. One of the Poro was caught sneaking a bite off the poro snack cupcake!

The Ultimate Pi Day

My nerdy senses were tingling the moment I woke up that morning. The ULTIMATE PI DAY!!! And why was this year's Pi Day the ultimate Pi Day you may ask? Well, we all know that every year on March 14 we celebrate Pi Day because 3, 1, and 4 are the three most significant figures of π and most of us tend to celebrate this mathematical day with pie. Yup, apple pie, cherry pie, blueberry pie, basically some yummy pie you can get your hands on. What makes this year the 'ultimate' Pi Day is because this year we'll be able to match the first 10 digits of Pi. The ultimate Pi Day is marked at 3.14.15 @ 9:26:53 on Saturday this year. (π = 3.141592653) And what made it even more awesome was that this only happens once every 100 years AND it's also Albert Einstein's birthday!!!

And on this special day I had to do something out of the ordinary. I mean this will be the only ultimate Pi Day I'll get to experience in my lifetime, so for this Pi Day I made homemade personal sized pizza pie and homemade cherry pie for dessert. Check it out!



There were many firsts on this special day. It was my first time making pizza from scratch. It was also my first time baking cherry pies, in a cast iron skillet nonetheless, and experimenting with the two different ways of making a lattice design on top. What did you do on the Ultimate Pi Day?

Always Keep Fighting

TWLOHA is always a sensitive topic. For those that feel it but don't know how to express themselves and for those that know about it, but don't know how they can make a difference to help. My heart goes out to this especially, because I know from personal experience. Losing someone and knowing you could have done something, anything, is unbearable. It's hard to know how to approach the situation. But there's one thing that I've learned that helps, it's letting that person know that they are not alone. Whether it's just a little bit of your time to hear them out, to just listen. It helps. It's the little steps and constant reminders. Sometimes the problems aren't something we can fix, but if they have the strength to voice their fears or worries, it would mean a great deal to them if you showed support.

I'm a huge advocate of 'To Write Love On Her Arms' and recently I found Jared Padalecki's "ALWAYS KEEP FIGHTING" campaign. Jared most well known for his part as Sam in the TV series Supernatural. His words for the campaign touched my heart, "... Be proud of your valiant day-to-day struggle. There is no shame in needing support. I hope this campaign will help you be vocal about your own struggles, or vocal in your support of those who might need a helping hand.
