Scallion Pancakes

If you haven't already guessed, I'm an avid baker. So one of the few things that I had excess around my house is flour; cake flour, bread flour, wheat flour and the ever so popular all-purpose flour. Surprisingly scallion pancakes doesn't require a lot of ingredients. All the recipe calls for:


Ingredients:
- 2 cups of all-purpose flour
- 3/4 cups of boiling water
- 1 teaspoon kosher salt
- one bundle of scallion (5-6 stalks)
- vegetable oil and/or sesame oil 


I changed the recipe just a little by adding sesame oil onto the dough after the first roll out and the second along with the scallions. I wanted my scallion pancakes to have a more defined sesame oil taste. But when I go to pan fry it, I just used regular vegetable oil. And if you're feeling even fancier, you can add sea salt flakes in between each roll out as well, but I didn't have any around the house, and for this meal I was really focusing on using what I had lying around. I was working with a super small budget and was only able to afford three bundles of scallions, which only cost me $2. I can make three meals of scallion pancakes with just two dollars! I'm impressed as well. I can't believe it took me this long to realize how much I could be saving for our meals.
